The recipe for Apollo fish may vary from region to region and from chef to chef, but the basic ingredients and cooking techniques remain the same. In this article, we will discuss a simple and easy-to-follow recipe for Apollo fish that you can try at home.
Ingredients:
500 grams of boneless fish fillets (any white fish such as cod, tilapia, or snapper will work)
1 tablespoon of ginger-garlic paste
1 tablespoon of red chili powder
1 tablespoon of coriander powder
1 tablespoon of cumin powder
1 tablespoon of turmeric powder
1 tablespoon of lemon juice
Salt to taste
1 egg
1/2 cup of cornflour
1/2 cup of all-purpose flour
Oil for frying
For the masala:
1 onion, finely chopped
2 green chilies, slit lengthwis
10-12 curry leaves
1 tablespoon of ginger-garlic paste
1 tablespoon of red chili powder
1 tablespoon of coriander powder
1 tablespoon of cumin powder
1 tablespoon of garam masala
Salt to taste
1 tablespoon of oil
Instructions:
Clean and wash the fish fillets and pat them dry with a paper towel. Cut the fish into small bite-sized pieces and set aside.
In a bowl, mix together ginger-garlic paste, red chili powder, coriander powder, cumin powder, turmeric powder, lemon juice, and salt to make a marinade.
Add the fish pieces to the marinade and mix well so that the fish is coated evenly. Cover the bowl with a plastic wrap and let the fish marinate for at least 30 minutes in the refrigerator.
In a separate bowl, beat the egg and mix it with cornflour, all-purpose flour, and a pinch of salt to make a batter.
Heat oil in a deep frying pan over medium-high heat. Dip each piece of marinated fish in the batter and carefully drop it into the hot oil. Fry the fish until it turns golden brown and crispy. Remove the fish from the oil and place it on a paper towel to remove any excess oil.
In a separate pan, heat a tablespoon of oil and add the chopped onion. Cook the onion until it turns translucent, then add green chilies and curry leaves.
Add ginger-garlic paste and cook until the raw smell disappears. Add red chili powder, coriander powder, cumin powder, garam masala, and salt to taste. Mix well and cook for a few minutes.
Add the fried fish pieces to the masala and toss well so that the fish is coated evenly with the spices. Cook for an additional minute or two.
Garnish the dish with chopped coriander leaves and serve hot with steamed rice or naan bread.
